Chef Youssef ElEbiary
Our philosophy is extending a hand to those who wish to share the little pleasures found within the craftsmanship of refined baking.

CHEF’S STORY
Chef Youssef El Ebiary’s journey from the world of finance to that of the culinary arts began shortly following his graduation from the EU Business School in Barcelona. In 2017, he pursued a Grande Diplôme at Cordon Bleu Paris (Cuisine + Pâtisserie), where excelled under the supervision of the legendary cuisine chef Eric Briffard. Through his experience with the best craftsmen in France, Chef Youssef was able to develop and master his own style of culinary craftsmanship.
His education continued under the renowned pastry chef Jean-François Deguignet, followed by studying the art of Boulangerie (Bread-making) under the wing of chef Oliver Boudot (Champion d’Europe 2010 and Champion de France 2009).
Since then, he has trained at La Maison Pichard, one of the oldest traditional French Bakery and Pastry shops in Paris with a history of over 100 years. Chef Youssef’s story does not stop there, as he continues his journey by bringing his repertoire of Pastry and Bakery expertise to Cairo.
With a specialty in consultation, the Chef has firsthand experience in establishing many F&B concepts thus bonding a fickle understanding of restaurant and cafe curation as well as consumer needs. Furthermore, mending the paths of art, science, and business to formulate a model fitting for the needs of the uprising local market.

Today, we are still building and developing EBY Bakehouse with the aim of achieving great things, from planning and creating solutions for F&B concepts, to new recipes and products that pioneer the industry. And we do it beautifully.
THE PHILOSOPHY
Professionals within this industry have been long guided by a certain set of standards, with a clear sense of right and wrong ingrained into their perspective. While it is important to understand the basics, knowing when to throw away the rulebook and break away from the norms is essential for creating new and innovative delicacies.
It falls upon the professional Pastry and Bakery chef to utilize their talent and creative capabilities in crafting exceptional pastries and showpieces, priding themselves on delivering the highest standards of quality.
However, Chef Youssef expands beyond his foundational training in classic pâtisserie and boulangerie by fully embracing the culture found in the streets of Cairo.
Through his creations that derive inspiration from the colors, scents, and flavors of Egypt, Chef Youssef embraces his cultural roots and core identity by capturing the true essence of Egyptian je-ne-sais-quoi.

This online concept was designed to invoke our commitment to precision, one that carries over into each exquisite detail of every stage of the baking and pastry-making process.
We are dedicated to the freshness of our products, we create each order specifically for you to guarantee the optimum delicacy.
Our journey of experimentation has led to a library of creations, archived and categorized into chapters under EBY’s Universe. Arranged based on the seasonality of the products, each chapter celebrates the seasonal ingredients of the time by encapsulating a theme or an emotional connection.

RESEARCH AND DEVELOPMENT
Our movements within the kitchen formulate perfection with a trifling sense of experimentation as notes of curiosity lie within our chefs as they enter their element.
We blend techniques as we highlight some of our finest local ingredients according to their seasonality. Using life’s most notable events as a cusp of inspiration; our holidays entice an array of special treats made to bring joy to each day.
Painting odes of appreciation for French technique and precision, Chef’s creativity merges experience with his love for Egypt’s cultural treasures that inspire new recipes using local ingredients.
Within our lab we infuse ingredients such as tahini and molasses, creating a twist on some of the most popular French pastries. Adding strong yet harmonious flavors such as hibiscus and rose and tying them into French desserts and pastries.
SEASONALITY AND OCCASIONS
Freshness and quality are first and foremost for optimum creation in the lab. We strive to highlight and utilize the season’s freshest extractions to explore different depths of flavor aligning all the elements to produce a taste of perfection.
Having local agricultural harvest as a source of inspiration within the lab is a signature note of creation for our chefs.
